- 1 1/2 c. self-rising cornmeal mix
- 1 (16 oz.) can creamed corn
- 1/4 c. vegetable oil
- 2 eggs
- 1/2 c. onion, chopped
- 1/2 c. bell pepper, chopped (optional)
- 2 to 3 jalapeno peppers, chopped
Directions

1Preheat oven to 450°.

2Spray an 8 or 9-inch skillet with cooking spray and heat in oven.

3Add ingredients to cornmeal in order listed.

4Add jalapeno peppers to taste.

5Stir ingredients until well mixed.

6Pour into hot skillet and bake 30 to 40 minutes.
