- 2 eggs, slightly beaten
- 1 c. yellow corn meal
- 2 tsp. soda
- 1 (17 oz.) creamed corn
- 1 c. milk
- 1 lb. ground beef
- 2 c. Cheddar cheese, grated
- 1 large onion, chopped
- 2 jalapeno peppers, chopped
- 1 tsp. salt
- 1/2 c. oil
Directions

1Combine eggs, corn meal, soda, salt, corn, milk and oil in a bowl and set aside.

2Saute ground beef; drain and set aside.

3Pour half of corn bread mixture into a greased 10 1/2-inch skillet. Sprinkle evenly with beef, cheese, onions and peppers.

4Pour remaining corn meal mixture over this.

5Bake at 350° for 45 to 50 minutes.

6Let stand 5 minutes before serving.

7Serves 6 to 8.
