  • 1 c. cream corn
  • 1 c. yellow cornmeal
  • 2 eggs, well beaten
  • 1/2 c. bacon drippings
  • 1 onion, chopped
  • 4 jalapenos, chopped
  • 8 oz. grated cheese
  • 1/2 tsp. baking soda
  • 1 tsp. salt
  • 1 lb. ground beef
  • 1 c. milk

Directions

    Mix corn, cornmeal, milk, eggs, bacon drippings, soda and salt. Brown meat and onions. Drain meat and add peppers. Add cheese. Pour 1/2 of batter in iron skillet and add meat on top of batter. Then pour remaining batter over meat. Bake 50-60 minutes at 350°.
