- 1 1/2 lb. hamburger
- 1 large can pureed tomatoes
- 1 pkg. taco seasoning
- 1 can French fried onions
- 1 pt. cottage cheese
- 2 eggs, beaten
- 1 1/2 c. shredded Cheddar cheese
- 12 (6-inch) flour tortillas
- 1 tomato, chopped
- sliced green onions
Directions

1Brown hamburger; drain fat.

2Add pureed tomatoes and seasoning. Simmer 5 minutes.

3In bowl, combine cottage cheese, eggs and 1 cup Cheddar cheese.

4In greased 9 x 13-inch pan, layer tortillas (I tear into pieces).

5Spoon meat mixture evenly next.

6Sprinkle with 1 can of onions.

7Top with another layer of tortillas.

8Spoon cheese mixture over tortillas.

9Bake at 350°, uncovered, for 35 minutes.

10Sprinkle remaining shredded cheese and bake 15 minutes longer.

11Garnish with chopped tomatoes and green onions.
