Mexican Lasagna

Ingredients

  • 1 (22 ounce) bag corn tortillas
  • 1 (28 ounce) can enchilada sauce
  • 1 (5 3/4 ounce) canjumbo olives, sliced (Reserve 1/4 cup for the top)
  • 3 lbs lean ground beef
  • 1 large onion, diced
  • 1 large green pepper, diced
  • 1 garlic clove, diced
  • 1 (32 ounce) bagmexican blend shredded cheese (you probably will not use all of the cheese)

Directions

    Brown ground beef along with the onion, green pepper, garlic and olives.

    Drain thoroughly.

    Ladle a small amount of Enchilada sauce on the bottom of a 9X13 baking dish.

    Layer in the corn tortillas making sure they overlap.

    Add 1/3 of the beef mixture and spread evenly.

    Add another ladle of Enchilada sauce to the top of the beef.

    Cover with a layer of cheese.

    Repeat the layering process of tortilla, beef, sauce and cheese 2 more times.

    On the last layer add a thicker layer of cheese and top with the remaining olives.

    Bake at 350 degrees for about 20-30 minutes or until the edges are crispy and hot through the middle.
