Mexican Lasagne

Ingredients

  • 1 (8 oz.) pkg. lasagne noodles
  • 1 lb. lean ground beef
  • 1 onion, chopped
  • 1/4 c. chopped fresh cilantro
  • 1 green pepper, chopped
  • 1 tsp. ground red chilies
  • 1 (15 oz.) carton Ricotta cheese
  • 1 egg
  • 1 (24 oz.) jar salsa
  • 2 c. shredded Monterey Jack cheese
  • 1 can sliced black olives

Directions

    Preheat oven to 375°.

    Cook noodles as directed and drain. Brown beef, onion, cilantro, green pepper and red chilies.

    Drain well.

    Mix raw egg in Ricotta cheese.

    (Will keep cheese from becoming runny.)

    Layer all ingredients with the topping being the Monterey Jack and black olives.

    Bake uncovered for 35 to 40 minutes.
