- 1 lb. ground beef
- 1 doz. tortillas
- 8 oz. Monterey Jack cheese
- 8 oz. Cheddar cheese
- 1 can refried beans
- 1 can enchilada sauce
- 1 bunch scallions, chopped
Directions

1Brown ground beef and scallions.

2Drain off fat.

3Add refried beans and enchilada sauce.

4Cook over medium heat for about 15 minutes.

5In a baking pan, cover bottom of pan with a little meat mixture.

6Then layer with tortillas.

7(Just enough to cover pan.) Then layer with meat mixture and then cheeses.

8Repeat, layering tortillas, meat mixture and cheeses.

9You will have 2 layers of tortillas and your top layer will be cheese.

10Bake at 350° for 1/2 hour.

11You can serve with sour cream and Guacamole.
