Ingredients

  • 1 c. rice
  • 4 Tbsp. cooking oil
  • 1 small bell pepper, chopped
  • 1/2 medium onion, chopped
  • 2 cloves garlic, minced
  • 1/2 tsp. cumin (comino)
  • 1/2 can Ro-Tel tomatoes
  • 1 3/4 c. water
  • salt and pepper to taste

Directions

    Brown the rice in the cooking oil.

    Drain off the oil; stir in all other ingredients, except water.

    Add salt and pepper to taste.

    Add water and bring to a boil.

    When it begins to boil, lower the heat and cover.

    Do not stir the rice mixture after this.

    Simmer until all the water is absorbed, 30 to 45 minutes. Serve hot.
