- 1 c. rice
- 4 Tbsp. cooking oil
- 1 small bell pepper, chopped
- 1/2 medium onion, chopped
- 2 cloves garlic, minced
- 1/2 tsp. cumin (comino)
- 1/2 can Ro-Tel tomatoes
- 1 3/4 c. water
- salt and pepper to taste
Directions

1Brown the rice in the cooking oil.

2Drain off the oil; stir in all other ingredients, except water.

3Add salt and pepper to taste.

4Add water and bring to a boil.

5When it begins to boil, lower the heat and cover.

6Do not stir the rice mixture after this.

7Simmer until all the water is absorbed, 30 to 45 minutes. Serve hot.
