- 1 medium chopped onion
- 1 clove garlic
- 1 c. rice, uncooked
- 1 tsp. salt
- 1 tsp. pepper
- 1 Tbsp. chili powder
- 4 oz. can mushrooms, drained
- 8 chorizo sausages (out of skin and crumbled)
- 1/3 c. olive oil
- 1 1/2 c. beef stock
Directions

1Saute onion and garlic in olive oil.

2Add rice, salt, pepper and chili powder.

3Add mushrooms and sausage.

4Place mixture in 9 x 13-inch pan and cover mixture with 1 1/2 cups boiling beef stock or enough to cover rice.

5Cover and bake at 350° for 30 minutes.
