Mexican Rice

  • 1 medium chopped onion
  • 1 clove garlic
  • 1 c. rice, uncooked
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1 Tbsp. chili powder
  • 4 oz. can mushrooms, drained
  • 8 chorizo sausages (out of skin and crumbled)
  • 1/3 c. olive oil
  • 1 1/2 c. beef stock

Directions

    Saute onion and garlic in olive oil.

    Add rice, salt, pepper and chili powder.

    Add mushrooms and sausage.

    Place mixture in 9 x 13-inch pan and cover mixture with 1 1/2 cups boiling beef stock or enough to cover rice.

    Cover and bake at 350° for 30 minutes.
