- 1 large tomato, chopped
- 1/4 c. chives, chopped
- 1/2 c. onion, chopped
- 1 large clove garlic, pressed
- 1 3/4 c. chicken broth
- 1/4 tsp. cumin (optional)
- 1/4 tsp. pepper
- 1 c. uncooked long grain rice
- 2 Tbsp. olive oil
Directions

1Bring chicken broth to boil.

2Saute onion and garlic in olive oil for 2 minutes.

3Add rice; saute for 2 minutes.

4Add boiling chicken broth, cumin and pepper.

5Cover and simmer for 10 minutes. Add tomato and chives; simmer for 5 minutes.

6Remove from heat; stir and set aside (covered) for 10 minutes before serving.
