  • 2 Tbsp. minced onion
  • 1/2 garlic clove, chopped fine
  • 1 small green pepper, diced fine
  • 2 Tbsp. cooking oil
  • 1/3 c. sieved, cooked or canned tomatoes
  • 3 Tbsp. water
  • 1 tsp. salt
  • pepper to taste
  • 6 eggs, slightly beaten

Directions

    In large skillet, saute onion, garlic, green pepper until tender in oil.

    Add tomatoes, water, salt and pepper to taste. Cook 3 minutes.

    Add eggs and cook over slow heat, stirring occasionally, until thickened.
