- 2 Tbsp. minced onion
- 1/2 garlic clove, chopped fine
- 1 small green pepper, diced fine
- 2 Tbsp. cooking oil
- 1/3 c. sieved, cooked or canned tomatoes
- 3 Tbsp. water
- 1 tsp. salt
- pepper to taste
- 6 eggs, slightly beaten
Directions

1In large skillet, saute onion, garlic, green pepper until tender in oil.

2Add tomatoes, water, salt and pepper to taste. Cook 3 minutes.

3Add eggs and cook over slow heat, stirring occasionally, until thickened.
