Mexican Skillet Dinner

Ingredients
- 1 lb. ground beef
- 1 small onion, chopped
- 3/4 c. uncooked rice
- 1 envelope taco seasoning
- 1 can kidney beans
- 1 can whole kernel corn
- 1 small can tomato paste
- chopped jalapeno pepper (optional)
- 3/4 c. water
- salt to taste
Directions

1Use a large skillet.

2Cook ground beef and onion until almost done.

3Add rice.

4Continue cooking until ground beef is done and rice is browning.

5Add envelope of taco seasoning.

6Mix well.

7Add tomato paste along with 3/4 cup water.

8Allow this to cook over medium heat, stirring occasionally, until rice is tender.

9Add kidney beans and corn.

10Mix.

11Allow to simmer 15 minutes more over low heat.

12Serves 6 to 8 easily.
