Mexican Skillet Dinner

Ingredients

  • 1 lb. ground beef
  • 1 small onion, chopped
  • 3/4 c. uncooked rice
  • 1 envelope taco seasoning
  • 1 can kidney beans
  • 1 can whole kernel corn
  • 1 small can tomato paste
  • chopped jalapeno pepper (optional)
  • 3/4 c. water
  • salt to taste

    Use a large skillet.

    Cook ground beef and onion until almost done.

    Add rice.

    Continue cooking until ground beef is done and rice is browning.

    Add envelope of taco seasoning.

    Mix well.

    Add tomato paste along with 3/4 cup water.

    Allow this to cook over medium heat, stirring occasionally, until rice is tender.

    Add kidney beans and corn.

    Allow to simmer 15 minutes more over low heat.
