Mexican Spaghetti

Ingredients

  • 1 large onion, chopped
  • 1 tsp. minced garlic or 2 or 3 cloves
  • 8 oz. spaghetti, broken in pieces
  • 24 oz. can tomatoes with juice
  • 14 oz. can chicken broth or make your own
  • 2 or 3 c. chopped chicken or turkey
  • 1 1/2 c. picante sauce
  • 1 tsp. ground cumin
  • 1 c. or 8 oz. grated fat-free cheese
  • 1/4 c. liquid Butter Buds

Directions

    In large skillet over medium heat saute onion and garlic in the Butter buds.

    Add chicken broth and tomatoes.

    Add spaghetti, break up tomatoes if they are whole.

    Add picante sauce and cumin, cover and simmer until spaghetti is cooked.

    Add chicken.

    Put in sprayed (no fat) casserole dish.

    Sprinkle cheese on top.

    Bake at 350° until cheese is melted.
