  • 1/2 tablespoon olive oil
  • 2 squash smalls, e.g. zucchini, halved and sliced
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/2 onion small, sliced
  • 1 lime small, juiced
  • 2 tablespoons cilantro minced

Directions

    Heat non-stick skillet on medium heat with olive oil.

    Saute onion for two minutes until semi-soft. Add garlic, squash, lime juice, cumin and chili powder and saute another 5 minutes until tender, adding tablespoonfuls of water to keep food from burning.

    Toss with cilantro.
