Ingredients

  • 2 Tbsp. vegetable oil
  • 1 large onion, chopped
  • 1 large green pepper, chopped
  • 2 cloves garlic, minced
  • 1 lb. ground beef
  • 1 can red kidney beans
  • 3 whole tomatoes
  • 2 tsp. salt
  • 1 to 2 tsp. cumin
  • 1/2 tsp. oregano
  • 1 dried chili pepper or 1 to 3 tsp. chili powder

Directions

    Saute onion, green pepper and garlic in oil for 5 minutes. Add ground beef and brown.

    Drain excess fat.

    Add remaining ingredients, including liquid from cans.

    Simmer 30 minutes.

    Add additional seasoning, if desired.

    Simmer another 30 minutes or refrigerate and reheat later.
