Ingredients
- 2 Tbsp. vegetable oil
- 1 large onion, chopped
- 1 large green pepper, chopped
- 2 cloves garlic, minced
- 1 lb. ground beef
- 1 can red kidney beans
- 3 whole tomatoes
- 2 tsp. salt
- 1 to 2 tsp. cumin
- 1/2 tsp. oregano
- 1 dried chili pepper or 1 to 3 tsp. chili powder
Directions

1Saute onion, green pepper and garlic in oil for 5 minutes. Add ground beef and brown.

2Drain excess fat.

3Add remaining ingredients, including liquid from cans.

4Simmer 30 minutes.

5Add additional seasoning, if desired.

6Simmer another 30 minutes or refrigerate and reheat later.
