- 8 whole eggs
- 4 egg whites
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 2 Tbsp. butter
- 1/2 c. finely chopped onion
- 1 tomato, halved, seeded and finely chopped
- 2 jalapeno peppers, seeded and finely chopped
- 1 Tbsp. chopped fresh cilantro
Directions

1Whisk eggs, salt and pepper in bowl.

2Heat butter in a large skillet over medium heat, add onion, tomato, jalapeno and cilantro.

3Saute 2 to 3 minutes, until onion is slightly soft. Add egg mixture to skillet.

4Cook, stirring, about 4 to 6 minutes.
