  • 1 pie shell
  • 2 cup shredded cheddar
  • 5 eggs
  • 1 lb ground turkey
  • 3/4 cup salsa
  • 4 tbsp taco seasoning
  • 2 tbsp olive oil
  • 1 1/2 cup evaporated milk or milk

    Preheat oven to 375

    Press your pie shell into a pre formed pan.

    Pie pan or quiche pan.

    I am using a quiche pan from Target.

    I love it because you can pop the whole quiche out of the pan.

    Cook ground turkey.

    Add 2 tbs taco seasoning and a dribble of oil.

    I use olive but veg oil is fine.

    Coat the bottom of your pie shell with the cooked meat

    Mix together eggs, salsa, 2 tbs taco seasoning milk and cheese in a bowl.

    Pour egg mixure over meat.

    Make sure it coats all the meat.

    If not, add another egg and a bit of milk til right.

    Put in the oven and cook 45 min.

    Poke the middle with a knife or toothpick.

    If it comes out clean, it's done.

    If not, put it in the oven and check every 3 to 5 min.
