Microwave Beef Stew

  • 2 lb. stew meat
  • 1 tsp. salt
  • 2 tsp. Worcestershire sauce
  • 2 c. boiling water
  • 2 large potatoes, pared and cut in eighths
  • 2 medium carrots, cut in thin strips
  • 1 large onion, cut in eighths

Directions

    Place meat into a 4-quart glass casserole.

    Add salt, Worcestershire sauce and boiling water; cover with an all-glass lid.

    Cook in microwave oven 10 minutes on High.

    Add potatoes, carrots and onion to liquid in casserole.

    Stir.

    Cook, covered, in microwave for 60 to 75 minutes at Simmer or until meat is tender.

    Stir occasionally.

    Be sure meat and veggies are covered with liquid during cooking.

    Add hot water if needed; let stand, covered, 15 to 20 minutes.

    Thicken liquid for gravy, if desired.
