Microwave Blueberry Muffins

- 1 3/4 c. all-purpose flour
- 1/3 c. sugar
- 2 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1 c. fresh or unthawed frozen blueberries
- 3/4 c. milk
- 1 egg
- 1/3 c. melted butter or margarine
Directions

1In a bowl, combine flour, sugar, baking powder and salt.

2Add blueberries.

3Add milk, melted butter and egg.

4Mix until dry ingredients are just moistened.

5Do not overbeat.

6Spoon batter into paper-lined microwaveproof baking or cupcake pan.

7Don't fill more than 2/3 up.

8Microwave at Med-High power for 3 minutes.

9Let rest for 3 minutes.

10Microwave at High power for another 2 to 3 minutes or until muffins are done.

11They will still be a little soft in the center.

12Let them rest in the pan for a couple of minutes.

13Serve them warm with butter or honey.
