- 3 eggs, well beaten
- 4 to 5 c. cooked rice
- 2 Tbsp. chopped green onion
- 1/2 tsp. salt
- 1 tsp. sugar
- 3/4 Tbsp. soy sauce
- 1 c. cooked diced ham, chicken or salami
Directions

1Melt butter in casserole dish; microwave on High for 40 seconds.

2Add eggs; cover.

3Microwave for 1 1/2 minutes.

4Stir; re-cover and microwave for an additional minute.

5Add remaining ingredients; stir gently to blend and microwave for 3 to 5 minutes on High.
