- 1/3 c. sugar
- 1 Tbsp. cornstarch
- 1/4 tsp. salt
- 1/4 c. cider vinegar
- 1 (16 oz.) can or jar red beets, reserve 1/2 c. liquid
- 1 Tbsp. butter or margarine
Directions

1Combine sugar, cornstarch and salt in a 1-quart glass casserole.

2Stir in vinegar and reserved beet liquid.

3Cook in microwave oven 3 to 4 minutes at High or until mixture boils and thickens slightly; stir twice.

4Add beets and butter to thickened sauce; stir.

5Cook in microwave oven 2 to 3 minutes at High or until thoroughly heated; stir once.

6Makes 4 servings.

7Can also be made on stovetop.
