- 1 (16 oz.) can sliced beets, undrained
- 1 Tbsp. cornstarch
- 1 Tbsp. plus 1 tsp. sugar
- 1/4 c. vinegar
Directions

1Drain liquid from beets into measuring cup so it measures 2/3 cup (add water if necessary).

2Set aside.

3Mix together cornstarch and sugar in a deep 1 1/2-quart nonmetallic casserole.

4Gradually add beet liquid and vinegar to cornstarch mixture and stir until smooth.

5Heat covered on Full power, 1 1/2 minutes or until it comes to a boil.

6Stir.

7Boil liquid for an additional minute. Stir after 30 seconds.

8Add beets and heat uncovered on Full power for 3 minutes.
