Microwave Lasagna

  • 1 1/2 lb. lean ground beef
  • prepared spaghetti sauce (homemade or store bought, Ragu Chunky tomato and onion is good)
  • small jar cut mushrooms, drained
  • 1 pkg. (8 oz.) lasagna noodles, cooked
  • 1 carton creamed cottage cheese (low-fat)
  • 1 pkg. (6 oz.) Mozzarella cheese (low-fat)
  • grated Parmesan cheese

    Cook noodles

    according to package directions. Crumble ground beef into

    safe colander,

    place

    over deep microwave-safe bowl.

    Cook on High setting for 5 to 6 minutes. Discard drippings. Combine

    beef, spaghetti

    sauce and mushrooms. Place layer of cooked noodles, 1/3 meat sauce mixture, 1/2 cottage cheese and 1/2 of Mozzarella in large Corning Ware casserole or Pyrex dish.

    Continue layering, ending with layer of noodles,

    topped with last of meat sauce mixture.

    Sprinkle shredded Mozzarella

    Parmesan cheese on top. Cover with glass top

    Microwave on Roast setting 15 to 20 minutes.
