Microwave Peanut Brittle

- 1 1/2 c. sugar
- 1/2 c. corn syrup
- dash of salt
- 2 c. raw peanuts
- 1/2 c. water
- 1 Tbsp. margarine
- 1 tsp. baking soda
- 1 tsp. vanilla
Directions

1Put sugar, corn syrup, water, salt and peanuts into a 2-quart microwave measuring cup.

2Do not cover.

3Cook on High for 5 minutes. Stir.

4Cook on High for 13 to 15 minutes, until hard crack stage (300° on the candy thermometer).

5Check temperature several times during the last few minutes.

6Do not leave thermometer in microwave.

7Stir in butter, soda and vanilla until light and bubbly.

8Pour onto buttered cookie sheet.

9Spread. Cool.

10Break into pieces.
