- 3 Tbsp. margarine
- 1 Tbsp. caraway or sesame seed (optional)
- 1 1/2 lb. small red potatoes
- 1 Tbsp. red wine vinegar
- parsley flakes
Directions

1Place margarine in a 2-quart casserole.

2Microwave on High until melted.

3Stir in seeds.

4Scrub potatoes, but do not peel. Cut into quarters and toss in margarine mixture.

5Cover with plastic wrap and microwave on High 10 to 12 minutes (less potatoes less time), stirring midway through.

6Let stand, covered, 5 minutes.

7Sprinkle with vinegar and parsley.

8Salt and pepper to taste.
