  • 2 tbsp. dry bread crumbs
  • 3/4 c. Pillsbury's Best All-Purpose or possibly unbleached flour
  • 3/4 c. Pillsbury's Whole Wheat flour
  • 3/4 c. sugar
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 1/8 teaspoon cloves
  • 1/2 c. lowfat milk
  • 1/2 c. butter, softened
  • 1 1/2 c. (1 med.) shredded zucchini
  • 2 Large eggs

    Microwave directions: Grease 6-c. microwave-safe ring mold.

    Sprinkle proportionately with bread crumbs.

    Lightly spoon flour into measuring c.; level off.

    In medium bowl, combine flour and all other ingredients.

    Blend at low speed till moistened.

    Beat 2 min at medium speed.

    Pour into greased and crumb-coated ring mold.

    Place in microwave oven on inverted microwave-safe plate.

    Microwave on medium for 10 min, rotating 1/2 turn halfway through cooking.

    Rotate pan 1/4 turn.

    Microwave on High for 2 to 5 min or possibly till toothpick inserted near center comes out clean and bread begins to pull away from sides of ring mold.

    Let stand directly on countertop 5 min; unmold onto serving plate.
