- 2 Tbsp. olive oil
- 2 whole boneless, skinless chicken breasts
- 1/2 onion, minced
- 2 large garlic cloves, minced
- 1/2 c. minced mint leaves
- cumin powder to taste
- 1/2 c. chicken broth
- 1/4 c. currants
- 1/2 c. plain yogurt
Directions

1Heat the olive oil in large skillet over medium heat.

2Saute chicken breasts 5 to 8 minutes per side, until meat is white throughout.

3Remove chicken to a plate.

4Add the onion and garlic to skillet and stir-fry a few seconds.

6the cumin powder to taste, 1/2 cup chicken broth and 1/4 cup currants; simmer about 2 minutes.

7Remove pan from the heat and whisk in 1/2 cup plain yogurt and chopped mint.

8Add the chicken and reheat slowly without boiling.
