  • 1 doz. corn tortillas
  • Wesson oil
  • 4 canned tomatoes, chopped
  • 2 to 3 eggs
  • 1/2 onion, chopped
  • 2 to 3 peppers (jalapeno or chili), diced
  • 30 oz. refried beans
  • 8 oz. chorizo, chopped (Mexican sausage)

Directions

    Tear or cut corn tortillas into 1-inch pieces.

    Cover bottom of skillet with oil.

    Fry tortillas in oil over high heat.

    Add tomatoes to skillet.

    Stir in chopped onion and 2 to 3 jalapeno or chili peppers, diced.

    Simmer until tender.
