- 1/2 c. flour
- 1 1/2 c. cornmeal
- 2 tsp. sugar
- 1 tsp. baking soda
- 1 tsp. baking powder
- 1 1/2 c. buttermilk
- 1 tsp. salt
- 7 oz. can mild jalapeno peppers, chopped
- 1 1/2 c. minced onions
- 2 eggs, beaten
- 1 c. sharp Cheddar cheese
- 3 Tbsp. bacon drippings
Directions

1Combine dry ingredients except salt in a large bowl.

2Heat milk with salt until hot.

3Add jalapenos and onions.

4Cover and cook 30 minutes over low heat.

5Cool.

6Combine eggs and Cheddar cheese.

7Blend dry ingredients, liquids, cheese mixture and bacon drippings until smooth.

8Pour into a well-greased 9-inch square baking pan.

9Bake in preheated 425° oven for 40 to 50 minutes.
