16 steps

Ingredients

  • 500 ml Milk
  • 100 to 120 grams Sugar
  • 3 Tea bags

Directions

  1. 1
Put milk and sugar in a pan and heat.
  2. 2
When the milk comes to a boil, turn the heat down to low and add the tea bags.
  3. 3
Simmer to extract the tea flavor for about 5 minutes.
  4. 4
Then just simmer the mixture slowly, stirring so that it doesn't get burned on the bottom, slowly so that the tea fragrance doesn't dissipated, and preventing a skin from forming on the top.
  5. 5
Don't leave the pot unattended and stir for about 1.5 hours until it is reduced to about 200 ml.
  6. 6
When the jam has reduced and thickened, strain it through a tea strainer or similar to remove any surface skin or lumps.
  7. 7
Pour into a sterilized jar and its done.
  8. 8
I used 3 bags of Earl Grey tea this time.
  9. 9
I think this is best made with a strong fragrant tea.
  10. 10
Put the milk and sugar in a large heatproof bowl and microwave for 2 minutes at 700W.
  11. 11
Add the tea bags, and roll the bowl around for about 5 minutes to extract the tea flavor.
  12. 12
Microwave with the tea bags still in the bowl for another 9 minutes.
  13. 13
    Remove the surface skin.
  14. 14
Squeeze out the tea bags to extract their flavor and take out.
  15. 15
Microwave for 3 minutes at 700 W to finish.
  16. 16
This will result in a smooth, silky jam.
