Ingredients

  • 1 lb. lean beef stew meat (cooked tender and put through food chopper)
  • 1/4 lb. beef suet
  • 3-1/2 lb. chopped tart cooking apples
  • 1-1/2 lb. chopped raisins
  • 1/2 tbl. salt
  • 1/2 cup beef stock
  • 1 cup brown sugar
  • 2-1/2 cup apple cider
  • -----
  • 1/4 cup white sugar
  • 2-1/2 cup purple grape juice
  • 1/2 tsp. mace
  • 1/8 tsp. pepper
  • 1 tsp. allspice
  • 1 tsp. cloves
  • 1 tsp. cinnamon
  • 1 tsp. nutmeg
  • 1/2 cup sorghum molasses
  • 1/2 orange, chopped
  • 1/2 lemon, chopped
  • 1/4 cup vinegar

Directions

    Cook stew meat until tender in a pot with a little water.

    Take beef out of pot and use the broth to cook the suet five minutes.

    Run the beef and suet through the chopper.

    Put back in pot with the apples, raisins, salt, brown sugar, and cider.

    Simmer one hour, stirring occasionally.

    Add remaining ingredients and boil another ten minutes, stirring occasionally.

    If canned, process 30 minutes in a water bath.
