Minestrone Soup

  • 7 c. water
  • 7 beef bouillon cubes
  • 1 (16 oz.) can stewed tomatoes
  • 1 c. onion
  • 1 c. celery
  • 1 c. sliced or diced carrots
  • 1 tsp. parsley flakes
  • 1 tsp. oregano
  • 1/2 tsp. basil
  • 1/2 lb. hamburger
  • 1 c. kidney beans (optional)
  • 1 to 1 1/2 c. elbow macaroni

    Place the first 9 ingredients in a large soup pot and simmer until vegetables are tender.

    While soup is simmering, make tiny meatballs to taste.

    Brown, then drain.

    Add kidney beans to soup; simmer 10 minutes.

    Add meatballs to soup; simmer 10 minutes. Add elbow macaroni and simmer until tender.
