Ingredients

  • 2 1/2 qt. water
  • 1 beef chuck roast with bone
  • 1 onion
  • salt and pepper
  • 1 c. navy beans, soaked overnight
  • 1 large potato, diced
  • 1 large carrot, diced
  • 1/4 head chopped fried cabbage
  • 2 cloves garlic
  • few celery leaves
  • 1/2 c. tomatoes or tomato juice
  • 1/8 lb. broken spaghetti or more if broth is too thin

Directions

    Boil water, chuck roast, onion, salt and pepper 1 hour gently. Add the next 6 ingredients.

    Cook until tender, then add the remaining ingredients.

    Simmer.

    Sprinkle with Parmesan cheese when serving.
