- 1 small onion, chopped
- 2 cloves garlic
- 3 Tbsp. olive oil
- 1 c. chopped celery
- 1 c. chopped cabbage
- 1 lb. zucchini, peeled and sliced
- 1 c. frozen peas or 8 oz. can
- 1 c. cauliflower, chopped
- 1 (16 oz.) can tomato sauce
- 1 c. water
- 1/2 tsp. basil
- 1/2 tsp. oregano
- cooked pasta (optional)
Directions

1Saute onion and garlic in oil lightly.

2Add cabbage and celery and cook for 5 minutes.

3Add other vegetables, tomato sauce and water.

4Salt and pepper to taste.

5Add herbs.

6If you want it more soupy, you can add more water or sauce.

7Can also add other vegetables like potatoes or broccoli.

8If you want, you can cook some small pasta (ditalini or small shells) and add to soup.
