Mini Brie & Apple Quiches

- 30 miniature phyllo cups
- 1/2 medium apple, peeled and finely diced
- 5 large eggs
- 1 teaspoon Dijon mustard
- 1/4 teaspoon salt
- 1/8 teaspoon fresh ground pepper
- 1/8 teaspoon ground nutmeg
- 4 ounces brie cheese (1/2 small wheel)
Directions

1Preheat oven to 350°F.

2Whisk together eggs, mustard, salt, pepper and nutmeg in a container with a pour spout.

3Arrange phyllo shells on a baking sheet which is lined with parchment or silicone. Divide the apple among the shells.

4Pour the egg mixture over the apple (do not overfill the shells). Place a Brie square in each shell. Do not put the cheese in before adding the egg, or it will be difficult not to spill.

5Bake until the egg is set, the Brie is melted and the phyllo is starting to brown around the edges, about 15 minutes. Let cool slightly before serving.
