  • 1 1/4 lb ground beef
  • 2/3 cup breadcrumbs
  • 1 None onion, peeled and finely chopped
  • 1 tbsp tomato paste
  • 1 None egg, beaten
  • 1 1/4 lb mozzarella, sliced
  • 1 None small tomato, sliced
  • 1/3 cup Parmesan cheese, grated
  • 1 sprig fresh rosemary, halved
  • 1 1/4 lb frozen potato wedges
  • 1 tbsp white wine vinegar
  • 3 tbsp olive oil
  • 1 pinch granulated sugar
  • 2 heads baby gem lettuces, leaves separated
  • 5.25 oz cherry tomatoes, halved

Directions

    Preheat oven to 400°F. Line a baking tray with parchment paper. Combine ground beef, breadcrumbs, onion, tomato paste and egg. Season then form into 4 small meatloaves. Transfer to prepared pan. Arrange mozzarella and sliced tomatoes over 2 meatloaves and Parmesan and rosemary over remaining meatloaves. Bake with potato wedges for 25-30 mins, until meatloaves are cooked through.

    Whisk vinegar, oil and sugar. Season then toss with lettuce and tomatoes. Serve with meatloaves.
