- 1 1/4 c. all-purpose flour
- 1 Tbsp. sugar
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1 1/2 c. buttermilk
- 1 egg
- 1 Tbsp. cooking oil
- nonstick spray coating
Directions

1In a medium mixing bowl, stir together the flour, sugar, baking powder, baking soda, and salt.

2In another mixing bowl, combine the buttermilk, egg and oil.

3Add to the flour mixture all at once. Stir the mixture just until combined, but still slightly lumpy. Spray an unheated nonstick griddle or nonstick heavy skillet with nonstick coating.

4For each pancake, pour about 1 tablespoon batter onto hot griddle or skillet.

5Cook until pancakes are golden brown on both sides, turning when pancakes have bubbly surfaces and slightly dry edges, about 1 minute per side.
