Ingredients

  • 24 cupcake liners
  • 24 vanilla wafers
  • 2 (8 oz.) pkg. cream cheese, softened
  • 3/4 c. sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 1 (20 to 21 oz.) can Wilderness peach, blueberry or cherry pie filling
  • 1/2 c. sliced nuts (optional)
  • 1 Tbsp. lemon juice

Directions

    Line cupcake pans with liners.

    Place a vanilla wafer in bottom of each liner.

    In small bowl, beat cream cheese, sugar, eggs, lemon juice and vanilla until light and fluffy.

    Fill the liners 3/4 full with cheese mixture.

    Bake in a preheated 375° oven for 15 to 20 minutes or until set.

    Top each with spoonful of filling and 1 teaspoon nuts.

    Chill.
