  • 1/4 lb bacon, ~6 slices, cut into 1 in. pieces
  • 1 lb ground sweet/breakfast sausage
  • 2 celery sticks, sliced
  • 2 med. sized carrots, sliced
  • 2 small potatoes, cubed
  • 1 bag whole leaf spinach, rinsed and destemmed
  • 8 c. low sodium beef broth
  • 1 12 oz. can diced tomatoes
  • 1/4 tsp cayenne pepper
  • 1 tsp dried parsley
  • 1 tsp dried oregano
  • 1/2 c. ditalini
