Ingredients

  • 3/4 cup margarine
  • 1 1/2 cups brown sugar
  • 2 tablespoons water
  • 2 cups chocolate chips
  • 2 eggs
  • 2 1/2 cups flour
  • 1 1/4 teaspoons baking soda
  • 48 mints Andres

    Melt margarine, add brown sugar. Stir until smooth

    Melt chocolate chips with water & add to margarine mixture

    Add eggs & remaining ingredients (except Andes Mints). Mix well with beater.

    Chill dough over night. (or at least put in freezer for a couple hours). If you do chill overnight, let it thaw for approx. 1 hour before rolling into balls.

    Roll into quarter size balls & bake at 350 degrees for 10min.

    Remove from oven & place 1 Andes mint on top of each cookie. When melted, spread over cookie.
