- 1 1/2 c. pineapple chunks
- 2 grapefruit, segmented
- 2/3 c. sugar
- 2/3 c. water
- 2 tsp. grated orange rind
- 2 drops mint flavoring or more
- 1/2 c. flaked coconut
- 6 red or green cherries
- fresh mint leaves
Directions

1Place pineapple chunks and grapefruit tissue-free segments in a covered container. Cook sugar and water until thick, about 5 minutes. Add orange rind and mint flavoring.

2Pour over fruit and refrigerate until thoroughly chilled. Spoon into compotes.

3Top each with coconut. Garnish with cherry and fresh mint leaves. Makes 6 servings.
