- 1 quart vinegar
- 14 cup sugar
- 2 cups fresh mint leaves or 14 cup dried mint flakes
- 2 -3 drops green food coloring
- 4 cups onions, peeled and sliced
- 4 pimientos, thinly sliced
- cheesecloth
Directions

1Tie mint in cheesecloth.

2Place in saucepan with the vinegar and sugar.

3Heat gently for about 10 minutes.

4Remove from heat.

5Stir in food coloring.

6Add onions and pimentos.

7Heat to boiling.

8Remove mint.
-
9Pour into hot 1/2 pint jars.

10Add lids and process in boiling water bath for 5 minutes.

11Remove jars.
