Minute Rice Casserole

Ingredients

  • 1 lb. ground beef
  • 3/4 c. chopped onion
  • 1 can tomatoes
  • 1 tsp. salt
  • dash of pepper
  • 1/8 tsp. each oregano, thyme, garlic salt and crumbled bay leaf (small)
  • 1 can mushroom soup
  • 1 c. Minute rice
  • 3 slices American cheese, cut in large strips
  • 3 sliced, stuffed olives (for garnish)

Directions

    Brown meat and onion. Drain.

    Add tomatoes, seasonings and soup. Simmer about 5 minutes. Add rice.

    After mixture comes to a boil, simmer another few minutes.

    Place in lightly greased casserole dish.

    Place strips of cheese on top. Bake at 350° until cheese melts.

    Garnish with olives.
