- pastry for 2-crust pie
- 4 c. blackberries, washed and drained
- 1 Tbsp. cornstarch
- 3/4 c. sugar
- 1/8 tsp. salt
- 2 tsp. lemon juice
Directions

1Preheat oven to 425°.

2Line a 9-inch pie plate with a little more than half the pastry.

3Lightly toss together the berries, cornstarch, sugar, salt and lemon juice.

4Fill the lined pie plate. Roll out the remaining pastry and cut a few slits in the top. Cover the fruit, sealing the edges well.

5For a glossy crust, brush with cream or beaten egg yolks.

6Bake for 45 minutes or until brown.
