- 125 g butter (or margarine)
- 1/2 cup white sugar
- 1 egg
- 2 cups self raising flour
- 1 teaspoon cinnamon
- 1 1/2 teaspoons mixed spice
- 1 cup mixed fruit
- 2/3 cup milk
- 1 teaspoon malt vinegar
Directions

1Preheat oven to 190 degress centigrade.

2Thoroughly grease muffin pans.

3Cream the butter or margarine and sugar in a bowl until light and fluffy.

4Beat in the egg and combine well.

5Sift the flour with the cinnamon and mixed spice.

6Add the vinegar to the milk.

7Stir the flour, mixed fruit and milk into the creamed mixture.

8Thoroughly mix ingredients together.

9Fill greased muffin pans three-quarters full and bake in a moderate oven for 20 - 25 minutes or until risen and golden brown in colour.
