Mixed Pickled Veggies

Ingredients

  • 2 qt. cooked green beans
  • 2 qt. cooked corn, cut off cob
  • 2 qt. chopped cabbage
  • 2 large green sweet peppers
  • 1 qt. chopped green tomatoes
  • 1 pt. chopped hot pepper

Directions

    Mix all together.

    Put in canning jars.

    Add 1 heaping tablespoon pickling salt per quart jar of mix.

    Leaving 1 inch at top of jar, cover mix with boiling water to 1/2 inch over mix. Put on canning top, not tight.

    It will pickle in 1 week.

    Check; may need more water to have mix well covered.

    Tighten tops.

    If you want, put in canning kettle with water, boiling water bath for 5 to 10 minutes to seal.
