  • 1 cup powdered sugar (sifted)
  • 4 tablespoons butter, unsalted, at room temperature, divided
  • 1 tablespoon milk
  • 14 teaspoon peppermint extract
  • 4 ounces semisweet chocolate, chopped

    Spray a 8-inch x 2-inch metal baking pan with cooking spray.

    Melt the butter and chocolate in the microwave and stir until smooth.

    Using an electric mixer, beat the eggs and sugar in a large bowl until light and fluffy, about 5 minutes.
