Ingredients

  • 2 c. sugar
  • 2 tsp. instant coffee
  • 1/2 c. light corn syrup
  • 1 1/2 c. half and half
  • 1 c. butter or margarine
  • 1 tsp. salt
  • 2 tsp. vanilla

Directions

    Mix all ingredients, except vanilla, in a large, heavy saucepan.

    Heat to boiling over medium heat, stirring constantly. Cook until temperature reaches 248° (firm ball stage on thermometer), about 1 hour.

    Remove from heat.

    Stir in vanilla. Pour into buttered 9 x 9 x 2-inch baking dish.

    Let stand until cool.

    Cut into 1-inch squares and wrap each caramel in waxed paper.

    Refrigerate up to 3 weeks.
