- 2 c. sugar
- 2 tsp. instant coffee
- 1/2 c. light corn syrup
- 1 1/2 c. half and half
- 1 c. butter or margarine
- 1 tsp. salt
- 2 tsp. vanilla
Directions

1Mix all ingredients, except vanilla, in a large, heavy saucepan.

2Heat to boiling over medium heat, stirring constantly. Cook until temperature reaches 248° (firm ball stage on thermometer), about 1 hour.

3Remove from heat.

4Stir in vanilla. Pour into buttered 9 x 9 x 2-inch baking dish.

5Let stand until cool.

6Cut into 1-inch squares and wrap each caramel in waxed paper.

7Refrigerate up to 3 weeks.
