- 4 eggs, beaten well
- 2 c. coarsely shredded zucchini
- 3/4 c. oil
- 1 tsp. vanilla
- 1 small pkg. instant chocolate pudding
- 1 1/2 tsp. instant coffee
- 1 box chocolate cake mix
Directions

1Beat eggs; add zucchini, oil, vanilla and pudding mix.

2Beat until smooth.

3Add instant coffee and cake mix.

4Mix on low speed until moistened, then on medium speed for 10 minutes.

5Turn into a well-greased Bundt pan and bake at 325° for 1 hour and 10 minutes or until done.

6Top with powdered sugar glaze.
