Ingredients

  • 6 to 7 zucchini (fresh), peeled and grated (6 c.)
  • 6 c. sugar
  • 1/4 c. lemon concentrate
  • 1 (20 oz.) can crushed pineapple
  • 2 small pkg. apricot flavor Jell-O

Directions

    Simmer the zucchini for 10 minutes.

    Add sugar, lemon concentrate, crushed pineapple and Jell-O mix.

    Cook until sugar is dissolved.

    Put in sterilized jars and cover with melted wax.
